How To Make Beef Tripe Pho:

Ingredients:

For Broth:

5 lbs beef bones with marrow, such as leg bones, oxtails, etc.

5 oz fresh ginger root

1 onion

1 daikon, peeled, trimmed, and cut in ½ or ⅓

5 star anise

8 cloves

2 cinnamon sticks, (3-inch)

1 tsp cumin seeds

5 tbsp salt, divided

4 tbsp fish sauce

4 tbsp sugar, divided

½ tbsp monosodium glutamate, optional

For Toppings And Garnish:

2 lbs beef plate

1 lb beef tripe

2 lbs beef top round, or eye round, sliced thinly

½ bunch cilantro, chopped

½ bunch scallions, chopped

½ onion, thinly sliced

fresh herbs, such as Thai basil, Vietnamese coriander, etc.

limes, cut into wedges

fresh bean sprouts, trimmed

hoisin sauce, to taste

chili sauce, to taste

3 lbs rice stick, prepared according to directions on package

Instructions:

Broth:

  1. In a non-stick skillet, brown the star anise, cumin seeds, cloves, and cinnamon sticks over medium heat until aromatic. Allow to cool before using.
  2. Transfer the spices to a muslin spice sachet after they have cooled.
  3. Over high heat, grill the unpeeled onions and ginger for about 45 minutes, turning once or twice, until all sides are blackened.
  4. While the onion and ginger are charred on the grill, begin preparing the stock.
  5. Place the bones in a large stockpot with enough water to cover the top of the bones and bring to a boil.
  6. Remove the scum and impurities from the water with a strainer. Collect the bones in a colander after removing any impurities.
  7. Fill the stockpot halfway with water. Rinse each bone in turn, removing any scum as you go. The cleaner the bones are, the clearer the broth will be.
  8. Fill a stockpot with 12 cups of water and bring it to a boil, along with the bones, daikon, beef plate, and 2 teaspoons salt.
  9. Place a fine mesh skimmer on top of the foam and fat, if needed, to skim it off.
  10. After the onion and ginger have been blackened, add them to the saucepan. To split the ginger, give it a few good strokes with a sharp knife.
  11. Add the spices, then the sugar and sachet.
  12. Bring all of the ingredients to a simmer over medium-low heat, stirring occasionally, for 3 to 4 hours. Remove any fat or foam that rises to the surface by skimming. If the broth becomes too thick, add more water.
  13. Remove the beef from the broth and submerge it in a bowl of cold water for 5 minutes when it is ready.
  14. Finally, season the broth with the remaining salt, fish sauce, sugar, and monosodium glutamate (if using), then taste it to adjust the seasoning.

Toppings And Garnish:

  1. Drain the beef and cut it into ¼-inch thick slices. Set aside.
  2. For the trip: In a large saucepan, bring water to a boil. Add the tripe and boil for 4 minutes after adding it to the boiling water. Drain the tripe and run it under cold water before cutting it into tiny pieces.
  3. Combine the scallions, cilantro, and onions in a mixing dish. Set aside.
  4. Place a portion of noodles in each soup bowl, topped with tripe and slices of the cooked beef plate, and thinly sliced raw beef.
  5. Pour the hot stock over the noodles and beef just before serving.
  6. Garnish with the onion and cilantro combination and a little black pepper.
  7. Add bean sprouts, herbs, and a squeeze of lime to the dish. For an added boost, dip the meats in hoisin and chili sauces. ENJOY!
