     Ingredients:

 

- 1 package of rice paper wrappers

- 1/2 lb shrimp, peeled and deveined

- 1/2 lb pork loin or belly

- 1 package of vermicelli noodles (bún)

- Fresh herbs: mint, cilantro, and Thai basil

- Fresh vegetables: lettuce, cucumber, and carrots

- 1 cup bean sprouts

- 1 tablespoon fish sauce

- 1 teaspoon sugar

- 1 clove garlic, minced

- 1 lime, juiced

 

     Instructions:

 

  1. Prepare the Ingredients: 

   -   Cook the Shrimp:   Bring a pot of water to a boil and add the shrimp. Cook for 2-3 minutes or until the shrimp are pink and opaque. Remove from the water and set aside.

   -   Cook the Pork:   Add the pork loin or belly in the same pot and cook until tender, about 20-25 minutes. Remove from the water, let cool, and slice thinly.

   -   Cook the Vermicelli Noodles:   Cook the vermicelli noodles according to the package instructions. Rinse under cold water and drain. Set aside.

- Wash and dry the lettuce leaves, mint, cilantro, and Thai basil.

   - Julienne, put the cucumber and carrots into thin strips.

   - Rinse the bean sprouts.

  - Combine the fish sauce, lime juice, sugar, and minced garlic in a small bowl. Stir until the sugar is dissolved. Adjust the seasoning to taste. You can also add a bit of chilli for some heat if desired.

   - Fill a large bowl with warm water. Dip a rice paper wrapper into the water for a few seconds until it becomes soft and pliable. Be careful not to over-soak, as the wrapper can become too sticky.

   - Lay the softened rice paper flat on a clean surface. Place a piece of lettuce in the center, then add a small amount of vermicelli noodles, shrimp, pork slices, bean sprouts, cucumber, carrots, and fresh herbs.

   - Fold the bottom of the rice paper over the filling, then fold in the sides and roll up tightly to form a spring roll. Repeat with the remaining ingredients.
